What Makes an Award-Winning Cider?

Part science, part sorcery.

There are plenty of theories about what makes a proper cider. Some say it’s all about tradition, some point to technique, and others are just happy if it doesn’t taste like fizzy apple squash. We say: it’s all in the attitude. And, of course, the apples. Always the apples. With a little bit of alchemy thrown in for good measure.

So what really goes into an award-winning cider?

Let’s break it down…

1. The Apples (Obviously)

No apples, no cider. But not just any old, bruised fruit that’s been rattling around the back of Tesco. Award-winning cider starts in the orchard with varieties chosen for character, sweetness, tannin, and that certain “can’t put your finger on it” orchard magic. Our job is to let the fruit do the talking.

2. Natural Sweetness

You can add sugar, syrups, or “flavourings” if you like. But you’ll never win awards doing it. Real cider has a balance that only comes from the natural sugars in the apple itself. Some are sharp, some are mellow, but together they give you that sweet-spot sip – not too cloying, not too dry. Like Goldilocks, but with more alcohol.

3. Bottling Without the Bodge

Here’s where the nerdy bit happens. Good bottling keeps the cider clean, crisp, and consistent so when you pop the cap you get orchard freshness, not farmyard funk. Presentation matters too. A smartly dressed bottle is far more likely to catch a judge’s eye (we’re looking at you, Old Rusty). Think of it as putting your best frock on before the dance.

4. A Little Bit of Mischief

Awards aren’t given for playing it safe. An award-winning cider has a spark… a twist that makes the judges raise an eyebrow and go back for a second sip. Whether it’s a bold dry that slaps you awake, a cheeky fruit blend, or something that makes you wonder why on earth does this work? — it’s all about character. And we’ve got barrels of it.

5. The Aftertaste (In More Ways Than One)

Winning cider lingers on the palate and in the memory. It’s the pint that makes you say, “Go on then, just one more,” or text your mate about the one you discovered at the festival. That’s what brings the awards our way: not just flavour but feeling.
