Beard. Brains. A Whole Lot of Apples.

The Cider Savant

At Hitchcox, cider-making isn’t just a process — it’s a way of life. A delicious, hands-on, often sticky way of life. Led by our founder Toby — known locally (and proudly) as The Man with the Beard — we blend age-old techniques with a splash of modern magic to create ciders that win awards, win hearts, and occasionally win over beer drinkers too.

Toby’s got a knack for knowing what apples want. With decades of obsession under his belt, he’s built something special- a cidery rooted in passion, purpose, and properly good fruit. Most of our apples are grown right here on our own Oxfordshire orchard, and we work closely with traditional growers (especially from cider royalty territory – Herefordshire) who share our obsession for quality.

We keep things natural, honest, and low-intervention. No shortcuts, no fakery, no messing about. Just sun, soil, and a whole lot of know-how.

Oh… and we’re not just about making our own stuff. Toby also helps other cideries across the UK perfect their craft (because when you know, you grow), and we offer bottling services too. We believe great cider should be shared, and that a rising tide lifts all apples.

And yes, we’re doing our bit for the planet, too. Sustainability is baked into everything we do, from reusing by-products to low-waste production and reducing food miles wherever possible. Good cider shouldn’t cost the earth.
